Easy Like Sunday Morning Coffee Cake
If we had to pick a favorite day of the week, we’d be partial to Sunday. It’s the day we sleep late, catch up on our favorite magazines, and enjoy brunch at home or a local cafe. (And we’re always game for a boozy #SundayFunday—Champagne Brunch, anyone?) With that in mind, we’re sharing the recipe for one of our weekend morning go-to’s: good old fashioned coffee cake. There’s nothing better than a warm slice of coffee cake served alongside your morning latte. This recipe is super easy to make, so even if you’re having an extra lazy Sunday (or, ahem, you’re hungover) you can still pop this in the oven and enjoy some fresh-baked goodness in a matter of minutes.
INGREDIENTS:
1 package yellow cake mix
2 6 oz containers of plain or vanilla yogurt
2 large eggs
5 Tbsp sugar
1 tsp cinnamon (or to taste)
You can also add chopped nuts, chocolate chips, or dried fruit
DIRECTIONS:
In a large bowl, blend cake mix, yogurt, and eggs until well blended. Pour into a greased 13 x 9 baking dish or bundt cake pan and spread evenly. Sprinkle sugar and cinnamon on top. Bake according to cake package directions. Allow coffee cake to cool before serving. Serve with a side of fresh fruit and a cup of piping hot coffee, natch.
